Spicy Chipotle Marinade

Now that it’s March, I feel like I can actually see the end of winter. It’s foreseeable that we’ll be barbecuing on our deck this month and it is certain that we will in April. In the spring and summer months, most of the meat we eat is grilled on the barbecue. Although there are a lot of tasty barbecue sauces out there, they get boring pretty fast. This is my favourite marinade, a recipe that I got off of the box of a bottle of Tabasco brand Chipotle sauce. It’s great on seafood, poultry, beef, and pork. This summer I plan to marinate tofu in it before grilling it on kabobs. Makes 1 1/2 cups.

 

1/2 cup olive oil

1/4 cup minced garlic

1/2 cup fresh squeezed orange juice

1/4 cup fresh squeezed lime juice

1/4 cup Tabasco brand Chipotle sauce

1 teaspoon salt

1 teaspoon ground cumin

 

1. Heat oil in a small pot over medium-low heat. Stir in the garlic and cook for about 15 seconds or until you can smell the garlic.

2. Remove from heat to cool slightly, then stir in the remaining ingredients and bring to a boil.

3. Remove from heat and cool to room temperature. Set aside 1/2 cup to serve at the table.

4. Use remainder to marinate seafood, poultry, beef, chicken (or tofu!). Discard used marinade if it was in contact with raw meat.
